The idea behind Kenji’s Sushi and Spirits originally bloomed from my visit to a humble little sushi shop nestled in the streets of Railay, Thailand, known as Lek’s Sushi. Having booked a full day of rock-climbing and greatly underestimating how tiring it would be, I was completely exhausted by noon and found myself ready to eat. I stumbled across Lek’s Sushi, and was immediately blown away by the fruit infused maki rolls, as well as Lek the sushi-chef's friendly and peaceful demeanor. He sat right across from me as I enjoyed his lovely sushi dishes, and we talked about his history crafting sushi and traveling the world. I hope that this story brings more people to discover Lek’s restaurant, and inspires them to explore every hidden nook and cranny of this wide and beautiful world. After all, that's  often how the best things are found!
